Step 1: Melt the chocolate

Step 2: Coating

Here, the product is fed to the machine’s coating pump, creating a continuous waterfall of chocolate that covers the product.

Note that the coating pump performs the actual coating of the item.

So once the product passes under the coating pump, the wire frame vibrates, ensuring that the chocolate is evenly coated on the bottom.

The blower in the machine has a similar function to ensure that coating does not build up on top of the product.

This is a very common problem with large flat products such as cakes.

Any chocolate that does not appear on the product is drained through a wire mesh rack.

Some machines may cycle unused chocolate back into the tempering system to avoid waste.

Other models, especially the more advanced ones, will be equipped with a tail cutter to remove the chocolate tail left by the coating machine.

Step 3: Cool down

In this step, the wire rack with the coated product moves through the primary conveyor belt.

A conveyor belt then transfers the product into a cooling tunnel, where it cools and the chocolate coating solidifies.

Note that the cooling area of a cladding line is usually a long insulated tunnel that maintains a constant low temperature.

This is critical to the outcome of the coated product.

If your machine does not have cooling channels, you will need to manually transfer the coated product to the refrigeration system for cooling.

Step 4: Packaging

Your product is now ready, fully coated and cooled.

The next and final step is to classify the product to determine if the coating is uneven or improper.

Remove any product that was not applied correctly or that may have been damaged during the application process.

The rest are now ready for packaging and distribution/shipping/shipping.
